Abstract: Plantain (Musa paradisiaca) is a food commonly consumed in Nigeria as boiled, roasted, or fried in its ripe and unripe form. Plantains harvested in Ekpoma, a predominately plantain-growing community, were studied for their mineral and sugar composition level of the unripe.
